Cucumber Yogurt

1 1 / 2 teaspoons cumin

1 cucumber, diced

2 stalks celeries, diced

1 bunch spring onion, chopped

2 fresh chillies, finely chopped

1 bunch parsley, chopped

3 tablespoons lemon juice

1 cup plain yoghurt

Salt to taste

  1. Skin the cucumber and scoop off the seed and dice finely. Place in a mixing bowl with celery, spring onion, chilli, parsley and lemon juice. Cover and place in the fridge.
  2. Before serving, mix in the yoghurt and sprinkle with freshly roasted cumin.
